Eggless Jam Filled Thumbprint Cookies

Thumbprint cookies are buttery melt-in-your-mouth cookies filled in the center with jam. The name “thumbprint” comes from the fact that you fill the cookies in an indentation made in the cookie dough with your thumb, with jam. I first baked these light jam cookies a long time ago, when my boys were small. I love this version, as it is eggless and I prefer to make this when I either run out of eggs or I need to share cookies with someone who does not consume any eggs....

Kashmiri Bhindi

Okra or ladies fingers are known as Bhindi/Bhinda in Hindi and are a hugely popular vegetable in Indian kitchens. Although some have a love/hate relationship with okra, the majority of Indian kitchens always welcome okra once in a week. I have seen families where one won’t like okra, but the other member can’t get enough of it. In our family, also there is the same opinion, one like it, one doesn’t but we have come to decide that no one has to love okra, but think of health benefits and just eat it and it works fine....

Peanut Noodle Salad

Perfect for meal prep or for a quick lunch. In this Asian cold noodle salad, crunchy vegetables and noodles are tossed in a soy garlic dressing. It is the kind of dish where you don’t even realise that you’re being healthy because it just tastes that good! This recipe is a little different in that it doesn’t use a peanut sauce but rather dried roasted peanuts. And as the salad is cold, I find that peanut sauce that is made with peanut butter can cause the noodles to clump up....
