They’re healthy, naturally vegan and gluten-free. I used to use the oven to make baked sweet potatoes but since I’ve discovered the air fryer method, I haven’t looked back! This recipe has a reduced cooking time compared with baking and you get the bonus of perfectly crisp skin and buttery soft filling inside. It is also convenient when you just want to cook just one sweet potato and do not want to turn the oven on for that one potato! It follows a similar recipe to my Air Fryer Baked Potato in which I microwave the jacket potato first. Air fryer sweet potatoes are rich in dietary fiber and vitamins such as Vitamin A and Vitamin C. Ingredients
You need just two ingredients! In fact, you can even skip the oil and you’d still get great results. Sweet potatoes – look for sweet potatoes that have unblemished skin with no bruises or dark spots. For even cooking, ensure your potatoes are similar in size. Oil – I have used a cooking oil spray. You can use other alternatives such as olive oil, avocado oil, canola oil etc.
Toppings & Serving Suggestions
Butter, fresh herbs like cilantro or parsley and salt and pepper – you can also use vegan butter and sprinkle over garlic powder.
Hummus – I love baked sweet potatoes with my Turkish hummus and salad for a quick lunch. See picture below.
Sour Cream and Chive Dip
Guacamole, salsa, cheese and black beans for added protein.
Vegetarian or vegan chilli or my Indian style spicy tofu burger filling.
My aunt has hers with Afgan Lubiya (Kidney Bean Curry) and fresh salad or baby kale on the side.
A cooling roasted tomato raita on baked sweet potato makes a well balanced meal.

Top it with feta or any salad cheese, olives, chopped onion and drizzle zingy vinaigrette. Also taste so delicious with Tzatziki sauce

How to make baked sweet potatoes in air fryer step by step instructions
Wash and lightly scrub the sweet potatoes under running water to remove dirt. Pat dry using a clean kitchen towel. Prick with a fork or sharp knife all over. Brush or spray on olive oil or use a cooking oil spray. Place in the air fryer basket Air Fry at 190C for 40 minutes or until the flesh is tender and the skin is crispy. I have tried this with smaller sweet potatoes and it only took 15 minutes. If the skin appears to be burning, turn down the heat. This timing will vary based on the size of your sweet potato so it is best to keep an eye on it during cooking.
For quick baked sweet potatoes in air fryer (microwave)
For baked sweet potatoes microwaved then air fried, you can save extra time. You can microwave the sweet potato for 7-8 minutes first. Poke holes into the sweet potato Place on a microwave safe dish and microwave on high You MUST prick the sweet potatoes to prevent them exploding! Finish off in the air fryer for 10 minutes to make the skin nice and crispy.
Japanese Sweet Potato in Air Fryer
Japanese sweet potatoes, also known as Satsumaimo, are a type of sweet potato (Ipomoea batatas) that originated in Japan. They are a popular variety of sweet potato known for their reddish-purple skin and pale yellow flesh. Japanese sweet potatoes have a distinct flavour and texture compared to other types of sweet potatoes. Prepare the Japanese sweet potato in the same way as above. Air Fry for around 40 minutes or until the flesh is tender. You can eat these straight from the oven as they will be wonderfully sweet!
Storage
You can store leftovers in the fridge for 3-4 days. Wrap with foil or place in an airtight container. You can also place baked sweet potato in the freezer for up to 3 months. Reheat in the air fryer or oven from frozen until piping hot through. Thaw frozen sweet potato then reheat as well.
