AIR FRYER SAMOSA PUFFS

These Punjabi Samosa puffs are made from a moreish flaky pastry that encases a mildly spiced potato and pea filling. Using a shop-bought ready-made pastry has ensured that these samosa puffs are super quick and easy to make. The filling of these puffs can so easily be adapted to suit your taste buds but I definitely recommend trying the recipe of the filling given below! The filling, made with mashed potato, green peas and spices is delicately spiced and not too overpowering. The spice mix is a finger-licking blend of fresh green chilies and ginger, amchoor powder and special masala. We have made these Punjabi samosas in the Airfryer rather than baking because the puffs only needed around 5-7 minutes in the air fryer before they were ready to eat. To air fry our samosa puffs, we have used our Instant Pot Vortex 4-in-1 Air Fryer. These air fryer banana chips with black pepper are so delicious and an easy recipe that one should not miss them. If you have a sweet tooth, try these no guilt air fryer apple ring doughnuts, they are utterly delicious! I’ve also baked a vegan burnt basque cheesecake in the air fryer too, and the result was phenomenal.

How to serve puff pastry samosa

Samosas go wonderfully on their own or with chutney. A chutney like Gujarati date and tamarind chutney or a green chutney would go great. Some people like to eat their samosas with a cup of masala chai. During the Summer months, a cooling lassi such as Caramel or Rose Lassi or Piyush Lassi would go well. Or serve with a fresh green salad for lunch. Serve them at your next Birthday/Diwali/Thanksgiving/Christmas get-together.

Tips

Use good quality ready-made puff pastry – I have noticed that own brand puff pastries tend not to be as good. The puff pastry should keep cold, take it out from the fridge only when you have other ingredients are ready or just 10 minutes before you start making it. If you’re using a frozen puff pastry, you must thaw first in the refrigerator overnight. The filling should be very dry. Do not add a lot of oil when making the filling. Also, it is very important that the filling should be cold before stuffing into the puff pastry, hot or warm stuffing will warm up the pastry and difficult to handle or it gets sticky. Can I make Samosa Puffs in advance?

You can definitely make the samosa puffs in advance at different stages during this recipe. Firstly, you can make the potato and pea filling ahead of time and keep it for a day in the fridge before using. You can also assemble the puffs and then store either in the fridge until ready to air fry. You can also freeze the puffs at this stage. If you freeze the puffs, the timings for air-frying will change. I would not recommend freezing once the puffs are cooked.

Punjabi Potato and Pea Filling

Mashed Potatoes – For samosa fillings, use starchy potatoes rather than waxy in order to get a fluffy mash. We pressure cook our potatoes in our Instant Pot before peeling and mashing. Green peas – we used frozen green peas, but you can use fresh peas too. Oil – we used olive oil Crushed spices: Coriander Seeds, Fennel Seeds, Whole black pepper, Cumin Seeds Crushed fresh green chilies and ginger Red chili powder Turmeric powder Garam Masala Red chili flakes (optional) Amchoor powder – aka raw mango powder. It is added to give a slight tartness. You can also use anardana powder or dried pomegranate powder. Alternatively, use a little lemon or lime juice Fresh coriander leaves – finely chopped Cashew and raisins – optional

Ready-made puff pastry sheets Kalonji – or onion seeds to sprinkle. Onion seeds lend a really delicious smokey and nutty flavour (you may use black sesame seeds or black poppy seeds) Milk – acts as a glaze (for a very shiny glaze use egg wash if consuming)

Alternative eggless glazes

To keep our recipes pure vegetarian, we always use eggless glazes in our bakes. For this recipe, we have used a brushing of semi-skimmed milk. As the puffs only need air-frying for 5-7 minutes, the milk does not burn and just leaves a pleasing golden crust. For other recipes where you do not mind a little sweetness, a brushing of light honey also leaves a shiny golden glaze on pastries.
