Delicious served hot or cold. This popular Indian drink is also known as Badam Doodh in Hindi or Badam Paal in South India. As it also contains saffron, you can also call it Kesar Badam Milk. It’s creamy thanks to the milk, delicately sweet and perfumed with almond, cardamom and saffron. It has a delicious texture from the nuts and is filling too. Badam Milk is often served at special occasions and at weddings. It also makes a great drink for kids, especially at bedtime. The traditional way of making this Indian almond milk is by soaking raw almonds, peeling then blending to achieve an almond paste then cooking with milk and sugar. Shortcut recipes often use almond powder which prevents the need to deal with almond peels! My Mum always keeps a Saffron Badam Powder mix made with ground almonds, cardamom powder, saffron and nutmeg. This means making this milk takes only a couple of minutes whenever the craving hits! Badam Milk Ingredients
Full ingredients with measurements are available in the recipe card below at the end of this post Whole milk – for the best taste use full fat milk but you can absolutely still make this with skimmed or semi skimmed milk too. Sugar – use white sugar or brown sugar. Note that brown sugar may change the colour. Badam Milk Powder – consists of almonds, pistachio nuts, nutmeg, cardamom seeds, saffron strands. Garnish with rose petals optionally or add a dash of rose water flavoring.
Vegan Badam Milk
You can easily make this recipe vegan by using a plant-based milk. Almond milk or oat milk are good choices as they will not impart any other flavours into the drink.
How to make Badam Doodh
Heat the milk, sugar and almond powder in a saucepan or heavy-bottomed pan on medium heat. Stir continuously and bring it to boil. Then, lower the heat and simmer the milk for another 4-5 minutes. Turn off the heat and serve hot or warm. You can also serve it chilled on hot days.
Storage
Let it cool at room temperature then chill in the fridge. Consume before the use by date of the milk you have used.
