Why I Love Black Bean Quesadillas:

Incredibly easy to make. Delicious and flavourful. Done under 30 minutes. Healthy, hearty and very filling.

Mexican food is my family favourite and after posting Vegetarian Burrito Bowl, I was looking forward to post this recipe. I have used black beans from can which is organic and low in sodium. But you can also cook black beans at home. Soak in water for 8 hours and then pressure cook until completely cooked. Along with black beans I have added chopped bell peppers. But other veggies or greens can also be used if you desire. The dish is made with simple ingredients and simple spices but provides bursting flavours. Use your choice of flour tortillas; I have used whole wheat to make it healthier. Serve Black Bean Quesadillas with Avocado dip, salsa or sour cream.
