Even my Dad every couple of months will mention butterscotch tart. We were sad to think that we might never be able savour that taste ever again. Until today.

WHAT IS BUTTERSCOTCH TART?

If you know, you know. Butterscotch tart is a classic, nostalgic dessert. It comprises a shortcrust pastry topped with “butterscotch”. The butterscotch is a very sweet filling made with milk, brown sugar, butter and flour and tastes a bit like caramel, although the texture is a little different.  In my opinion, butterscotch tart isn’t complete without chocolate 100s and 1000s. This silky butterscotch tart melts in your mouth. Even after years passed by, when I close my eyes, I can still taste the incredible buttery sweetness of this dessert.

INGREDIENTS REQUIRED FOR BUTTERSCOTCH TART

For the eggless shortcrust pastry, you will need plain flour, caster sugar, softened butter, a pinch of salt and water For the butterscotch filling, you will need demerara sugar, milk, butter and plain flour. Top with chocolate hundreds and thousands to make it authentic.

METHOD TO MAKE SCHOOL DINNER STYLE BUTTERSCOTCH TART

To make the eggless shortcrust pastry – sift plain flour, caster sugar and salt together. Add the butter and form a dough. Roll out the pasty, transfer to desired bakeware and bake blind. Meanwhile, to make the butterscotch filling – melt butter in a pan and add the demerara sugar, Mix until it dissolves. Add the milk and flour and whisk quickly to prevent any lumps. Pour into the pastry case. Allow to cool then refrigerate. The risk of being the kind of cook that never measures any ingredients when cooking, is that this habit can easily spill over when baking. This can be a dangerous affair as baking requires precision. I haven’t baked enough in my time to know how much to add – something my mum is a lot better at!
