The perfect reasons to eat one of these are: they are sugar free (sweetness is only from healthy dates), all the goodness of crunchy cornflakes and nuts, quick and easy to make (no cooking involved), totally vegan and no oil, butter or ghee used!! I love to make anything that takes less time slaving over the stove and if you see my blog posts, you will notice, I veer more towards quick and easy recipes!! When I came across tons of recipes of energy bites and granola bars using oats, muesli, dates, peanut butter, honey etc., I had to try making them at home!! These take just minutes to prepare but are loaded with nutrients from dates, cornflakes and nuts. No baking or cooking involved; just crush the ingredients, mix and make balls or ladoos out of them. There is no fixed list of ingredients. You can use any kind of nuts, add raisins, chocolate chips (your kids would love that!!), dried figs, dried apricots, oats etc. If you have a food processor, making these is even more easier.

With Diwali and other holidays around the corner, our homes will be filled with sweets and savory snacks loaded with fat, sugar and calories. At times like these, it is good to have this guilt-free crunchy date, nuts and cornflakes energy bites around to dissuade you from gorging on them and they are perfect for serving them to your guests as a Diwali treat!! Healthy and Crunchy Dates and Cornflakes Energy Bites

Ingredients:

2 cups cornflakes 1 cup pitted dates ¼ cup cashew nuts 1/4 cup almonds Desiccated coconut (optional)

Step-by-step method:

Gather the ingredients.

Crush the cornflakes with a spoon (or use clean hands; an easier method) and keep aside. Soften the dates in a microwave (if they are hard and a bit dry) for a few seconds and make a paste in a blender or food processor. Chop the nuts coarsely (you may make them into fine crumbs or leave them coarsely chopped like I did, as I like to bite into bits of nuts in the ladoos!!).

Mix all 3 in a bowl with a spoon or easier yet, use your hand to mix and knead them into a well-incorporated mixture.

Take small portions of the mixture in your hands and roll them into small balls or ladoos.

For a variation (it looks good too), you can roll them in desiccated coconut.

Bite into one of them (well, you deserve this healthy treat!!), serve to your family and store leftovers in an airtight container in the refrigerator.
