Easy Dry fruits and Cornflakes Chivda/Mixture is an Indian snack mix, a spicy and savory mélange of nuts, roasted cornflakes and spices along with sweet raisins for the sweet tooth in me; traditionally served during Diwali or Festival of Lights in India, which comes tomorrow! It is so crunchy, spicy and tasty; you can serve them with your afternoon tea/coffee or munch on them all day! Come Diwali and every household in India as well as Indians all over the world, are busy preparing their house for the upcoming Festival of Lights by cleaning every part of the house thoroughly, preparing special savory and sweet treats and then on the D-day, light up diyas (oil or ghee lamps)all around the house and celebrate this special day by sharing these delectables with family and friends! I have already made my Horlicks Burfi and am ready with my favorite Indian savory snack, Cornflakes Chivda. All the basic ingredients for this snack mix are mostly available in every house; nuts, raisins, cornflakes and spices like red chilli powder, turmeric and coriander powder. So, putting this together takes nothing to no time! Traditionally, the cornflakes are deep fried along with all the nuts, raisins and my favorite, green chilis/jalapenos and curry leaves! But, I detest the oily after taste, so prefer to just lightly shallow fry them in a little oil.
Being a south Indian and coconut always in stock, I have added some slivers of dry coconut, or as they call it in India, copra. This is easily available in any Indian store, but addition of this is totally optional. My husband loves it, so I never fail to add this to my chivda! Once you have gathered the ingredients, making this takes as much time as roasting them in a little oil until they are crisp and crunchy. Add salt to taste with a bit of powdered sugar for the sweet element in it. Trust me, adding a bit of sugar, enhances the taste of this savory treat! This is my go-to snack to make when I have lots of leftover store bought packets of chivdas; I roast them along with cornflakes and nuts with some spices and a brand new snack is ready! So, do try this today; it comes together quick and tastes spicy, savory and sweet at the same time for an all-day snack to munch on or as a spicy, savory and mildly sweet Indian snack mix at your next party! We love it with our evening chai! Lets get to the recipe shall we?
How to make Cornflakes and Dry Fruits Chivda:
Gather ingredients for chivda.
Cook Time: 15 minutes
5 cups cornflakes ½ cup peanuts ½ cup readymade boondi (deep fried chickpea savory) ¼ cup roasted chana dal ½ cup raisins ¼ cup cashew nuts ¼ cup almonds ½ cup slivered dry coconut Few sprigs curry leaves 1 tsp red chilli powder ½ tsp turmeric powder ½ tsp hing/asafetida 1 to 2 tbsp coriander powder (optional) 2 to 3 tbsp powdered sugar (or to taste) Salt to taste 4 tbsp oil 1 tsp mustard seeds
Instructions Notes For a low-calorie option, omit the readymade boondis. If you don’t have cornflakes, you can use poha or flattened rice; roast or deep fry them and then use in the chivda.
In a large kadai or deep saucepan, add 2 tbsp oil and roast peanuts, almonds, cashew nuts and slivered dry coconut until lightly crisp and golden. Remove and keep aside. In the same oil, add raisins and fry again until they puff up; remove and keep aside.
To the same kadai, add 1 to 2 tbsp of more oil and mustard seeds. Once the seeds start to crackle and splutter, add chopped green chillies and curry leaves.
Fry the green chilies and curry leaves on medium low heat until lightly crisp.
At this stage, I have added some leftover savory mixture I had. Fry again for a few seconds.
To this mixture, add red chili powder, turmeric powder, hing and coriander powder.
Mix well and stir in cornflakes and boondi. Stir in salt to taste and powdered sugar and toss well on medium low heat.
Now, add the fried nuts, raisins and coconut and toss well.
Keep frying until the whole mixture is sautéed well, coated with all the spices and flavors and heated through. Do a taste test and adjust salt and powdered sugar.
Remove from heat and spread in a large pan to cool.
Once cool, store in airtight containers; of course after serving to your family and friends 🙂
