EASY MANGO MOUSSE TRIFLE – a refreshing, luscious mango mousse trifle with layers of creamy mango mousse and biscuit/cookie crumbs; a perfect summer dessert to indulge in. Summer and mangoes go hand in hand in India and with markets flooded with varieties of mangoes incomparable with any in the world, it is raining mangoes every day! We normally love to enjoy this tropical fruit fresh, juicy, ripe and natural as an after lunch/dinner fruit. But sometimes, it is ok to indulge in some sinful dessert using this “King of Fruits” as they call it in India, don’t you think? What better time to indulge in than now; to celebrate my 4 years of food blogging!
CELEBRATING 4 YEARS OF FOOD BLOGGING:
In these tough times of Corona virus pandemic, I almost forgot that it has been 4 years (started in May 2016) since I ventured into the virtual world to showcase my passion for my first love, cooking and baking! I cannot believe that this has become my world now with tons of appreciation from friends, family and lots of prizes and accolades from cooking contests and food connoisseurs.
MANGO MOUSSE TRIFLE AND KULFI/ICE CREAM:
My first dessert using mangoes was this easy semolina Mango Sheera; a quick Indian dessert dated May 2016. Then later of course this guilt-free Mango “Nice” Cream! But this time, I wanted to use the can of chilled condensed milk and a carton of fresh cream lying in my fridge to make a quick and summery mango ice cream with just 3 ingredients; mangoes, cream and condensed milk, but ended up making this beautiful, easy and delicious layered Mango Mousse Trifle too! Double bonus for us! As we are just the two of us at home, I made just 2 glasses of trifle; you can use up all of it to make more.
The remaining mousse mixture was frozen in popsicle molds for an indulgent Mango Kulfi (kulfi is Indian ice cream); my ice cream craving satisfied totally and making these again and again! The best part is, it is so easy to make – just blend cream, condensed milk and mango puree in a blender until smooth, frothy and slightly thick; yes, no hand whipping, stand mixer etc.; just a blender!
Then let set to thicken slightly in the fridge. For the cookie crumbs, just roughly chop cookies, blitz in blender or food processor, add some melted butter and blitz again to get wet crumbs.
Finally, layer the creamy mango mousse with biscuit or cookie crumbs (mixed with some melted butter to make them moist and wet sand like) into pretty glasses for a delicious and beautiful trifle. Set in refrigerator for at least a day to allow the mousse to set or if you like an ice cream like texture, freeze for a few hours. We enjoyed it chilled in the fridge for about 4 hours; it was dreamy, creamy and absolutely heavenly with bites of biscuit crumbs in every spoon! (But make sure to start with a layer of mango mousse or all you will end up with some crumbs at the end; like in these; starting my layering with mousse first next time!)
Make this mango mousse and enjoy as trifles or just make popsicles or kulfis and if you do not have kulfi moulds, just spread in a pan and freeze like you would any ice cream.
Trifles were gone in no time but we are enjoying those popsicles every day! Leave them to freeze completely for at least a day or two to enjoy the full flavor of delicious mango popsicles.

FOR THE MANGO MOUSSE: 1 cup mango puree (from 2 cups mango chunks) or use tinned mango puree, chilled 1 cup cream (I have used Amul cream), chilled 1 cup condensed milk, chilled FOR THE BISCUIT/COOKIE LAYER: 15 to 20 biscuits or cookies (any you like; I have used Parle biscuits, Marie biscuits etc.) ¼ cup melted butter OPTIONAL: Few strands of saffron soaked in 2 tbsp milk (optional)
Instructions Notes If using canned mango puree (sweetened) then reduce the amount of condensed milk accordingly. Add fresh (or frozen) bits of mango to the mousse mixture before chilling and layering if preferred. Nuts can be added too.
