About Fig and Cashew Balls
I have a sweet tooth, and I often crave something sweet. So I usually prefer to make naturally sweetened snacks or healthy energy balls that satisfy my craving. And I always keep naturally sweetened dried fruits and nuts handy for making delicious and healthy snacks. Combining sweet and chewy dried figs and nutty cashews is fantastic and make delicious energy balls. These balls are sugar-free and made with only figs, cashews, and ground cardamom. However, adding cardamom is optional, or you can add other spices of your choice. Cashews balance the sweetness of dried figs and provide a delicate nutty taste. But if you like to add other nuts instead of cashews, feel free to do so. For example, walnuts or almonds will be an excellent choice for making these energy balls. Or add a combination of nuts instead of using only cashews.
Ingredients
How To Make Fig and Cashew Balls
In a medium heatproof bowl, take the dried figs. Pour hot water into the bowl and soak the figs for 15 minutes.
Drain the water completely and place the soaked figs into the food processor fitted with an S-shaped blade. Process until figs are finely chopped or almost ground.
Add chopped cashews and ground cardamom. Process until everything combines well, sticks together, and becomes almost like a dough. There will still be tiny bits of cashews but do not process for longer.
Scoop the dough with using a tbsp, and form it into small balls using your hands. If it is too sticky and hard to form balls, lightly grease your palm with coconut oil or any other neutral oil. Enjoy the fig energy balls immediately or store them in an airtight container.
Storing Suggestions
These energy balls will stay at room temperature, covered tightly, for a week. Fig energy balls can be refrigerated for up to three weeks. Freeze these sugar-free fig and cashew balls in a freezer-safe container or bag for up to three months.
