nowadays my lunch is more of a healthier and balanced meal and try for something which can be prepared in less time. It being winter, I am in need of hot and comfort food, and when you think about quick, easy and hot bowl in your hand, thinks about pasta! Traditional Spaghetti Genovese is Italian dish, which is prepared with pasta, potato and Pesto, and has too much carb for me to handle, So I prepared Kale spaghetti Genovese, removed potato totally and tossed in a vegan kale Pesto and added some protein-packed Soya beans to complete balanced meal. This vegan pasta dish is the perfect solution when you want something quick and tasty-and everything cooked in one pan! I totally skipped any kind of cheese and used Nutritional yeast for cheese flavour which is very healthy without any fat. So, the day before yesterday I had flavoursome, earthy and well balanced vegan lunch and I was satiated.
