MIXED CEREAL CHEVDO
This healthy and irresistible savoury snack is prepared with various types of breakfast cereals and seasoned with some basic masala powders such as red chilli powder and whole spices. A little amount of powdered sugar, citric acid added to enhance the taste and makes this snack more exciting. Serve on its own or if you want to have it for breakfast with a bowl of yoghurt as an alternative.
LET’S TALK INGREDIENTS
1 small bowl of each cereal of around 100 gms { These cereals are available in the UK }
Plain Cornflakes Cheerios Bran flakes All bran sticks Rice crisps Shredded wheat Shreddies Multi grain start Almonds Cashew nuts Dried coconut slices ( 3 TBSP )
SPICES AND MASALA
2-3 tbsp oil 3-4 green chillies sliced ( Leela marcha ) 10-12 fresh curry leaves ( Kadi patta ) 5-6 cloves ( Laving ) 1-2 small Cinnamon sticks ( Taj ) salt to taste 2-3 tbsp powdered sugar ( Buru Khand ) 1/4 to 1/2 tsp citric acid ( limbu na phool) 1 1/2 tsp red chilli powder ( lal marcha powder ) 2 TBSP. white poppy seeds ( optional ) ( Khus Khus ) 1 TBSP. whole coriander seeds (optional ) ( Akha Dhana ) 1 TSP. Mustard seeds (optional ) ( rai ) Pinch of asafoetida ( Hing ) (optional)
HOW TO MAKE MIXED CEREAL CHEVDO
Roast almonds and cashew nuts in the oven or in microwave about 5-6 minutes. Place all the cereals in a large bowl, add raisins and poppy seeds. Also, add roasted nuts and coconut slices. Grind sugar and citric acid into a coffee grinder and grind till it turns into fine powder separately, add three quarter into the cereal. Add chilli powder and salt into the cereal, mix very well. Heat oil in a small pan, add mustard seeds, cloves and cinnamon and fry for few seconds, in remaining hot oil add curry leaves and green chillies and fry till they are crispy ( be careful chilli seeds might splutter out) pour oil and chillies into the cereal mixture. Gently give it a good mix. If the flavouring isn’t right to how you would like, then add the remaining ground sugar and citric acid. Give another good mix. When the cereal mixtures cool down transfer into an airtight container. Enjoy as much as my family does, I have to warn you guys the above measurement of ingredients is not enough for more than a week..:)
