My love for ice cream goes way back to my childhood when I used to pop into the neighborhood ice cream shop for some simple vanilla flavored ice cream, churned by hand! The only two flavors they had were vanilla and strawberry! Today, aisles and aisles of grocery shelves are loaded with a plethora of flavors that sometimes, choosing one is like trying to decide which dress to buy! You would want all of them!

Pineapple ice cream is one you would not find easily. So, when I decided to make some Avocado Ice Cream with creamy, just-ripe avocados recently, I pondered, why not halve the whipping cream and condensed milk cans and try both Avocado Ice Cream and Pineapple Ice cream! Double delight for the family! Recipe for Mint Avocado Ice Cream with chocolate chips has been posted already. To make pineapple ice cream, just cook fresh pineapple chunks with some sugar for 5 to 7 minutes and cool. Blend this with condensed milk and whipped cream (either whipped up in a blender or beaten with hand blender until thick and fluffy). You can use canned pineapple too but without the syrup.

 We love tutti frutti bits in our cookies like Karachi Biscuits/Cookies, in breads or even cakes. Tutti frutti is candied fruit bits mostly made with raw papaya. They are easily available in Indian stores. If you cannot find them, you can omit them or use some raisins instead. I had some tutti frutti packets that I had bought recently, so I stirred in some. Mmmmm, love those tender, sweet, fruity bits! Mix in gently and freeze for a few hours. How delicious is that?

Set frozen ice cream at room temperature for about 10 minutes, then scoop up and enjoy! When making luscious, healthy homemade ice cream is so easy to whip up, why buy from the store? Cool and refresh yourself with some more easy to make, no-churn, no ice cream maker ice creams this summer:

½ can of condensed milk (about 200 gm or half of a 14-ounce can) 250 ml of chilled whipping cream 2 cups chopped pineapple 2 tbsp sugar ½ tsp vanilla ¼ cup tutti frutti Mint leaves for garnish

Instructions Notes Raisins would sound and taste lovely too! You can use canned pineapple (without the syrup) or crushed canned pineapple instead of fresh.
