PASSION FRUIT SALAD DRESSING is a quick, tangy, mildly sweet and savory salad dressing with my fresh home grown passion fruits and lemons; a perfect accompaniment to any salad. Salads are something our family loves and enjoys with most meals. When in India, where sourcing fresh salad leaves is kinda difficult in most places, especially small towns, we make local types of salads like Sprouted Green Gram Salad, Mung Bean Sprouts, Mango and Corn Salad, Grated Carrot Salad with coconut Etc. But now that I am in San Diego and my son who had just moved to a new house has these amazing fruit trees in the background; lemon, lime, Chinese/Philippines oranges, Mandarin oranges, pomegranates and Passion Fruit, I have to use these up in my everyday dishes don’t you think? Guess, I am starting with this amazing, mix and use kinda dressing! WHAT IS PASSION FRUIT? These tropical fruits with a jelly like consistency, mildly crunchy seeds and a sweet and tangy taste are indigenous to South America but sometimes also grown in other parts of the world like here in California.
The ones that are grown here are of the purple skin variety. These exotic/tropical fruits grow on vines and before becoming a fruit (first green and then starts to ripen and turn purple or red), they are actually a beautiful purple flower which lasts just for a day and then they start turning into a fruit!
When ripe they are green and with a taut skin but as they ripen, they change their color to light/dark purple/red and start to get wrinkly when fully ripe.
The skin is not edible so you have to cut it and remove the inner pulp. The inner pulp can be used as toppings on desserts, in desserts, in juices or like I have made, in a salad dressing.
PASSION FRUIT DRESSING:
Once the fruit is ripe, wash thoroughly, cut into two and remove the pulp. If the seeds are not too hard and you do not mind the mild crunch of them (we actually love it when added to fresh juices!), proceed making the salad as such. If not, blitz the pulp in a blender for a couple of seconds; pulse if needed and then strain the juice to remove the black seeds.
Once you get the juice, it takes no time at all to make the dressing. Just stir in some oil (I have used Extra Virgin Olive Oil; you can use any of your choice), lemon/lime juice (I have used home grown lemons), some sweetener (preferably honey but I was out of it so used Maple Syrup) and a dash of salt and pepper. Mix thoroughly, chill and serve!
SERVING SUGGESTIONS:
I was amazed by the sweet-tangy-savory taste of this Passion Fruit Dressing that I have been enjoying them in my salad bowls ever since (healthier than those store bought dressings!) Serve them on the side or mixed into salads. They go well drizzled on cooked veggies, as marinades, as a dip etc. too. Now, isn’t this one of the easiest dressings you can make?
