Pineapple banana lassi ; a refreshing yogurt based drink with cool chunks of pineapple and healthy sweet bananas infused with  a tinge of cardamom and ginger Scorching summer heat is upon us and everyone is reaching out to cool themselves down with some chilled drink. It could be cold coffee, coconut water, soft drinks, fresh juices or just some fresh, healthy fruits. My favorite is lassi! It is a traditional Punjabi drink made with yogurt as a base. Yogurt is an amazing coolant. In combination with fruits you can make a variety of lassis, be it strawberry lassi, mint lassi or my favorite, mocha lassi! It is amazing how a tart plain yogurt can really add a zing into any lassi, be it sweet or savory!

Today, I will be sharing a simple and luscious variety of cooling lassi made with pineapple and bananas. I love adding bananas in milkshakes and ice cream floats. Why not in lassis?  I had some over ripe bananas which no one wanted to eat and the best part of using over ripe bananas is they are much sweeter than regular just ripe bananas and this gave me a good excuse to avoid adding any sugar. So, I just blended some chunks of pineapple that I had with these along with yogurt for a cooling lassi to provide some relief on these hot summer days.

I have also added some ginger to give it an intense flavor and punch up the lassi. Just toss in some chopped ginger (it aids in digestion too) while blending along with the ubiquitous aromatic spice of every Indian dessert; cardamom! The final drink was so delicious, my family was asking for more! I have not added any sugar but if you feel the need, do stir in some sugar or even honey. Enjoy!! Love lassis? 1 large banana, peeled and chopped 1 ½ cups pineapple, cut into chunks ½ inch ginger, peeled and chopped ½ cup yogurt ½ cup milk ½ tsp cardamom powder Mint leaves for garnishing
