SOFT TIL CHIKKI RECIPE
Til Papdi or tal ni chikki/tal sakri is a winter special, traditional Indian sweet that is slightly crispy on the outside but melt in the mouth and soft inside. It is prepared with only 3 ingredients – Sesame, Jaggery and a drop of ghee. As soon as the new year begins, the Indian calendar celebrates Harvest festivals such as Makarsankranti, also known as Uttarayan or Pongal. In Gujarat, Uttarayan is also known as the kite flying festival. During this season, Indian winter meals such as Gujarati Surti Undhiyu and warming Gajar ka Halwa are enjoyed. Chikki is also very popular during Makarsankranti. TIL CHIKKI WITH JAGGERY
Tal Papdi is a sweet snack made with sesame seeds and jaggery. Sometimes, it is made with sugar instead of jaggery. There are variations to the texture of chikki. You can either have thin sesame chikki which is hard and crunchy or soft chikki whereby the jaggery retains it’s soft and moist texture. This recipe makes tal papdi which is not chewy. The soft texture is achieved by ensuring the jaggery is not cooked but only melted. Cooked jaggery causes the chikki to harden. It is easy and quick to make – usually in under 15 minutes. It has a unique taste and can be stored for months due to its extended shelf life. I can guarantee that this Tal Sankri, Til Chikki or Til Patti will be one of your winter favourites for years to come! This satisfying Indian sweet brittle or crisp is considered to be healthy and nutritious if consumed during the winter months.
SESAME SEEDS AND JAGGERY IN WINTER
Sesame brittle is most commonly eaten during winter, although it is prepared throughout the year. This chikki is a potent mix of warming ingredients. Both sesame seeds and jaggery are highly nutritious, providing vitamins and minerals in the diet. Sesame Brittle is highly calorific and so provides much needed energy during the colder season.
INGREDIENTS FOR SESAME CHIKKI
Basic and easy to find ingredients are needed for this recipe. Sesame Seeds – raw sesame seeds are the main ingredient you will need. We have used brown or unhulled sesame seeds which are the most common type used in sesame seed papdi. Jaggery or gor is the other main ingredient. Jaggery is an unrefined sugar product made from cane sugar. Ghee or unsalted butter. Ghee is only required to line the plate or tray before setting the hot mixture. To make vegan til chikki, avoid the ghee and use melted coconut oil. For variation, you could add a pinch of cardamom powder however both sesame seeds and jaggery have robust flavours and therefore taste great on their own. We have used slivered pistachio and dried rose petals for a photography purpose only.
