Vegetarian Burrito Bowl with Avocado Sauce:

Mexican food is my family’s favorite. Burritos, Quesadilla, and Tacos are often made meals in my kitchen. My hubby and I really enjoy this burrito bowl. While my son still wants bean mixture wrapped in a soft tortilla. I have used long-grain rice for this burrito bowl. Use your choice of rice; however, I would recommend a long-grain variety. The avocado sauce is just too good. It is very simple to make. I have added sour cream, green chili, lime juice, salt, and black pepper. Green chili is totally optional. Also, use plain yogurt instead of sour cream if you want. This sauce adds more flavor and moisture to this burrito bowl. I love this hearty meal so much, and I couldn’t stop myself from sharing it with you. Black bean mixture is very easy to make. I have used my Homemade Taco Seasoning; however, you can use your favorite taco seasoning. Because we do not eat onion and garlic, I always keep my taco seasoning ready. It really makes life easy and helps to make dinner quickly. Taco seasoning is really necessary for this recipe. If you do not have one without onion and garlic, try this Homemade Taco Seasoning. It is really easy to make. If you don’t want to make it, check the recipe for ingredients. And add all the ingredients individually into the black bean mixture as per your taste. In this recipe, I have used bell peppers in the bean mixture. But other veggies of your choice can also be added. If you are using canned beans, make sure to drain and rinse properly before using. For serving, add baby spinach or lettuce to this bowl. On top of everything, add avocado sauce generously. You can use many garnishes for this burrito bowl. Add cheese of your choice.
